Beef Muchomo is a beloved Ugandan street food—simple, smoky, and deeply satisfying. Tender cubes of beef are marinated with warm spices and citrus, then grilled over open heat until charred on the outside and juicy within.
Ingredients (Serves 4)
- 900g beef, cut into bite-sized cubes
120ml vegetable oil
1 onion, cut into chunks (petal layers separated)
Juice of 1 lemon
1 tsp salt
½ tsp garlic powder
¼ tsp ground cardamom
¼ tsp freshly ground black pepper
Wooden skewers, soaked in water
Step 1: Prepare the marinade
In a large bowl, whisk together the lemon juice, vegetable oil, garlic powder, cardamom, salt, and black pepper.
This marinade is simple but effective—bright citrus balances the richness of the beef, while cardamom adds a subtle aromatic warmth.
Step 2: Marinate the beef
Add the beef cubes and onion pieces to the bowl. Toss thoroughly to coat.
Cover and refrigerate for at least 4 hours, ideally overnight, to allow the flavours to fully penetrate.
Step 3: Assemble the skewers
Thread the beef and onion alternately onto the soaked skewers, packing them snugly but not too tightly for even cooking.
Step 4: Grill
Preheat your Grillstream grill to 180°C (medium-high heat).
Cook the skewers for 10–15 minutes, turning regularly, until the beef is nicely charred on the outside and cooked through.
Step 5: Serve
Serve hot straight off the grill with:
extra lemon wedges
a simple chilli sauce or fresh salsa
flatbread or chapati on the side
Tips for best results
Use a slightly fatty cut (like chuck or brisket) for better flavour and tenderness
Don’t skip soaking the skewers—they’ll burn otherwise
High heat is key for that signature smoky char
